homemade hummus

Uncle Whit's Spicy Hummus
makes about 1 1/2 cups

INGREDIENTS:
1 can 15 oz chickpeas
1 jalapeno, serrano or Thai chili pepper
1-2 garlic cloves
1/4 cup tahini
1/4 cup fresh lemon juice
1/2 tsp cumin
2 tbsp olive oil
2-3 tbsp water
salt

METHOD:
1. Combine all ingredients in a food processor and blend until smooth. Thin with additional water if  consistency becomes too thick. Add salt to taste and increase the amount of chili peppers if more heat is desired.

2. Use a spatula to scoop out hummus into a serving dish. Drizzle with a splash of olive oil and a dash of paprika (optional). Serve with your favourite vegetable crudites, chips or warmed pita bread.
